How to Clean a Knife

Knives of all types must be cleaned regularly to keep them clean, rust-free and free of bacteria. They require special handling and care, depending on the type of knife and their various uses.
Cleaning a Kitchen Knife
Wipe clean knife after each use. Kitchen knives will be harder to clean if you leave the debris stuck. After using a knife, quickly pass the knife under water. Allow food or debris to brush and drain into the sink. If anything gets stuck on the knife, wipe it off quickly with a sponge or cloth. Set the knife aside until you are ready to wash.
Clean with the blade pointed away from you. Once you are ready to clean the knife, use a mild dish soap. Be sure to clean the knife with the blade pointing away from you to avoid injury.
Foam a sponge in warm, soapy water. With the blade pointed away from you, gently clean the knife until you remove all food and stains.
Be careful not to rub too fast. If you scrub vigorously or quickly, the knife may slip and you may be cut. Some people feel more comfortable by putting the knife on a flat counter and rubbing the sides one at a time. This can make the injury less likely.
Soak the knife for a minute or two if the food is stuck. Sometimes the food will get stuck on a kitchen knife despite all your efforts. In this case, soak the slide in shallow water for a minute or two. After that, you should be able to scour the food.
